Disclosed is a substantially purified or isolated nucleic acid or nucleic acid fragment encoding a thaumatin-like (TL) polypeptide or complementary or antisense to a sequence encoding a TL polypeptide and including a nucleotide sequence selected from the group consisting of (a) sequences shown in Figures 10, 12, 13, 15 and 42 hereto (Sequence ID Nos: 29, 31 to 34, 35, 37 and 38, and 68, respectively); (b) complements of the sequences recited in (a); (c) sequences antisense to the sequences recited in (a) and (b); and (d) functionally active fragments and variants that have at least approximately 80% identity to the relevant part of the sequences recited in (a), (b) and (c) and have a size of at least 20 nucleotides.
