PROBLEM TO BE SOLVED: To provide a method for producing sugar, a method for producing ethanol and a method for producing lactic acid, in which enzymatic saccharification is efficiently carried out and hence the efficiencies of producing sugar, ethanol and lactic acid are improved, and to provide sugar produced by the method for producing sugar.SOLUTION: The method for producing sugar includes: a process for alkali treatment in which a cellulose fraction whose crystallized type is changed is obtained from the alkali treated products of at least either leaf and stem part of herb material or broad leaf tree material; and a process for saccharification in which the cellulose included in the cellulose fraction is saccharified by enzymes.
