METHOD FOR MAKING RUSKS FROM THIN ARMENIAN BREAD

The invention pertains to the food industry and can be used in the food products sector, in particular for preparing various types of rusks from thin Armenian bread. The proposed method for preparing rusks from thin Armenian bread comprises forming and preparing a dough preparation for thin Armenian bread, cutting the same in order to shape finished products and baking the same. After baking the thin Armenian bread, the finished product is separated into small distinct finished products. The separation of the finished bread into distinct products is carried out in a rotary drum and using a sorting sieve with further re-use of the crumbs and smaller residue. Food and/or flavor additives are then added, or an oil or oil-emulsion processing is carried out followed by the addition of food and/or flavor additives. The finished rusks are then transferred for packaging.
