PURPOSE: A producing method of kimchi with the increased calcium is provided to use crab by-products as a food resource by adding the crab by-products to a kimchi seasoning mixture. CONSTITUTION: A producing method of kimchi with the increased calcium comprises the following steps: washing crab by-products, and dipping into fish sauce for 24~30hours; boiling the fish sauce separately and putting the crab by-products back in, and repeating the step for 2 more times; aging the crab by-products mixed with the fish sauce for a month at 4deg C; heating the crab by-products before drying at 45~60deg C, and crushing to make crab by-product powder; and adding 0.01~1 parts of crab by-product powder by weight to 100 parts of kimchi seasoning mixture by weight. |
