PURPOSE: A dropwort liquid extraction method for producing dropwort beverage, and the dropwort beverage are provided to use organic acid to extract nutrients and polyphenol from dropwort. CONSTITUTION: A dropwort liquid extraction method comprises the following steps: washing dropwort and removing roots before cutting into 0.5~1cm(S1); mixing organic acid with purified water to form an organic acid solution(S2); dipping the cut dropwort to the organic acid solution(S3); stirring the organic acid solution with the cut dropwort(S4); filtering the organic acid solution to obtain a dropwort extract(S5); and adding sugar to the dropwort extract(S6).
