The process comprises cutting two skin pieces of raw chicken, macerating the two cut pieces (1) in a liquid marinade for a specified period of time, boiling the chicken meat with water vapor for a specified period of time, placing the boiled chicken meat between two marinated raw chicken pieces, boiling the assembly of pieces for obtaining a crispier chicken part, and adhering the ends of the two boiled chicken pieces. The liquid marinade is composed of mustard and butter of same quantity, and filled with spices. The cutting of the chicken piece is carried out in circular form.
