The baking oven (1) comprises a baking muffle (2), a cross-flow ventilator (3) that produces a cooling airflow with a cooling air channel (4), a vapor exhaust channel (6) that flows into the cooling air channel, an orifice area of the vapor exhaust channel directly arranged in the vicinity of the blowing region of the ventilator, at which a suction capacity for the vapor from the exhaust channel adjusts itself with a minimum number of revolutions of the ventilation wheel, and an air channel set for exhausting the mixed air flow from cool air and vapor at the blowing region of the ventilator.
