摘要 FIELD: food industry. ^ SUBSTANCE: invention relates to technology of canned compotes manufacturing. The proposed preparation method includes the following operations. The formulation ingredients are pre-processed according to the traditional technology. Prepared dandelion roots are cut, dried in microwave field at preset process parametres till residual humidity about 20%. Dried oyster plant, barley, oat and rye grains are roasted according to the traditional technology. Roasted oyster plant is milled. Milled oyster plant, barley, oat and rye grains are mixed in a weight ratio of 3:6:3:8. The produced mixture is wetted down with drinking water at phases ratio of 1:(6-7) and extracted. The produced extract is separated from cakes and filtered according to the known technology. One adds sugar to the produced after filtration extract and boils syrup. Raspberries and the produced syrup are packed at specified component ratio, vacuum-sealed and sterilised according to the specific technology to produce the end product. ^ EFFECT: invention allows to reduce boiled fruits content in the finished product and extend its storage life.
