A device for egg pasteurization consists of at least a selection unit (1) for sorting or classification of eggs with regard to weight and size, namely diameter, length and similar, and also of a preparation unit (2), transportation unit (3), pasteurization chamber (4), packing unit (5), cold storage refrigeration unit (6) and optionally a distribution unit (7), where beside a pasteurizator (46), intended for egg pasteurization, the said pasteurization unit (4) comprises at least a refrigeration unit (47) for cooling pasteurized eggs down to a temperature between 2 and 6 degrees Celsius, preferentially to about 4 degrees Celsius. According to the invention, a packaging unit (48) is arranged in the interior of the pasteurization unit (4), foreseen for individual packing of individual eggs, where each respective egg is inserted into an individual sterile container (8), after which the container (8) is closed tightly, and the egg is to be found in a sterile atmosphere for itself only since then, and as such, closed airtightly without any possibility to get in touch with the atmosphere out of the container (8) or with other eggs. A packaging (9), consisting of at least one container (8), is provided according to the invention, as well as the procedure of pasteurization, by which the durability of fresh eggs can be extended from previous 3 weeks to 24 weeks. |
