FIELD: food industry. ^ SUBSTANCE: group of inventions relates to technology of production of diet flour confectionary for feeding of patients with sugar diabetes. Methods include kneading of dough, containing mixture of wheat flour and chicory flour, salt, soda, yolks, vegetable oil, phospholipids and water, its formation in form of sheets and baking. To obtain filling, cookery fat, sweetener "Sladex", flour and wafer crumbs are mixed. Wafers are formed from sheets and filling. Flour for dough is prepared by cutting chicory, drying it in SHF field at specified process parametres, roasting and cryogrinding in liquid nitrogen obtaining flour, flour for filling is made by extraction of tangerine rind with liquid nitrogen with separation of corresponding miscella, cutting of girasol or girasol-sunflower or yacon or chicory, drying of the latter in SHF field at specified process parametres, roasting, soaking with separated miscella with simultaneous increase of pressure, drop of pressure to atmospheric with simultaneous freezing of raw material and its cryogrinding in medium of released nitrogen obtaining flour. ^ EFFECT: obtained diabetic wafers have improved consistence and coffee taste and flavour without having coffee in composition. ^ 4 cl |
