A PROCESS FOR PRODUCING A BIOLOGICALLY ACTIVE GLOBULAR PROTEIN COMPLEX

A method of producing a biologically active globular protein complex comprises the step of contacting a globular protein-containing solution with an excess of a water soluble salt of a fatty acid in the presence of globular protein denaturing conditions. The globular protein is selected from the group consisting of a-lactalbumin, ß-lactoglobulin and lysozyme, and the globular protein-containing solution may be mammalian milk, either in its natural form or in a pre-processed form (i.e skim milk). The water soluble salt of a fatty acid is a water soluble salt of a C16 to C20 fatty acid, for example oleic acid. A biologically active globular protein complex comprising a denatured form of a globular protein and a water soluble fatty acid salt is also described.
