PURPOSE: An energy-saving evaporator in which the water does not decrease is provided to dramatically save the energy by reducing the operating time of an evaporator by maximizing the natural evaporation by lowering the evaporation temperature. CONSTITUTION: An energy-saving evaporator(100) in which the water does not decrease comprises a body(10), an overflow pipe(40) and an overflow cap. The water is accepted in the body. In the body, an air layer, which supplies a water variable section according to the volume change of the water, an inlet(14) and an outlet(13) are formed. An entrance is located on the air layer so that if the water volume increases in the body, the water can be discharged by the increased level. The overflow cap drowns the opened lower end and is blocked in the shape of covering the entrance of the overflow pipe from the top. The overflow cap prevents the steam contained in the air layer from becoming exhausted through the entrance of the overflow pipe.
