PURPOSE: A pine bud kimchi and a manufacturing method thereof are provided to offer a unique taste to kimchi by adding the flavor and the medicinal effect of pine buds, and aging the kimchi in a cave for a long time. CONSTITUTION: A manufacturing method of a pine bud kimchi comprises the following steps: cleaning and dehydrating Chinese cabbages, after soaking in salt water to make salted cabbages(S11); warming 50 parts of pine bud by weight and 50~75 parts of water by weight for 48~72 hours to extract pine bud liquid, and mixing the pine bud liquid with mixed seasonings to make a kimchi filling(S21); mixing the kimchi filling with the salted cabbages(S31); and vacuum packaging the mixture and aging for 5~7 months in a cave(S41,S41'). |
