PURPOSE: A manufacturing method of semi-dried melon is provided to maintain the original color of melons while reducing the moisture of the melons to 45~50%, and to store the semi-dried melon for a long time. CONSTITUTION: A manufacturing method of semi-dried melon comprises the following steps: pre-processing a fresh melon material(20); freezing the mateiarl for 1~5 hours in -35~-45 deg C(30); dehydrating the frozen melon to make the moisture content to 45~50%(40); and packing the semi-dried melon in a retort pouch(50). The dehydrating process is performed in the temperature of -10~-15deg C, for 12 hours. |
