PURPOSE: A vinegar which is manufactured using fruit extract of Araliaceous Shrubs is provided to have a large amount of functional ingredients and to improve human health. CONSTITUTION: A method for manufacturing vinegar comprises: a step of adding 10-30 weight parts of water to 1 weight part of fresh fruits or dried fruits of Acanthopanax sessiliflorus or Acanthopanax senticosus and adding sugar ingredient to prepare ingredient mixture liquid; a step of fermenting the mixture with alcohol; and a step of performing acetic acid fermentation. The fresh fruits or dried fruits are added in pulverized state.
