摘要 <p><P>PROBLEM TO BE SOLVED: To provide a method for producing a soybean essence-containing fermented liquor in which a nutrient contained in soybean is converted by fermentation reaction to a soybean essence to be easily taken in the human body and added to fermented liquor. <P>SOLUTION: The method for producing a soybean essence-containing fermented liquor includes a first step of using polished rice having a rice milling ratio of 90-50%, adding a seed malt to a malted rice raw material of polished rice to produce malted rice, then mixing a main raw material composed of polished rice with the malted rice, yeast and water and fermenting the mixture to give an unrefined sake, a second step of adding a seed malt to a malted rice raw material composed of soybean to produce the malted rice, then mixing the malted rice with yeast and water to give soybean fermented unrefined sake and a third step of mixing the unrefined sake with the soybean fermented unrefined sake, further fermenting, aging, then filtering the mixed unrefined sake to give a soybean essence-containing fermented liquor. <P>COPYRIGHT: (C)2010,JPO&INPIT</p>
