摘要 <p><P>PROBLEM TO BE SOLVED: To provide a sugar solution enabling the penetration to bioethanol industry, the production of high-alcohol beverage, and the automation of fermentation control, and using rice as a raw material, to provide a high-concentration saccharified liquid by using the saccharified liquid as a fermenting water, and to provide a method for producing alcohol by using these saccharified liquids. <P>SOLUTION: A starting saccharified liquid having a Brix of 15-25%, a total nitrogen content of not less than 1.2 mg/mL, a potassium content of not less than 400 ppm, a phosphorus content of not less than 300 ppm, and a magnesium content of not less than 50 ppm is prepared by allowing anα-amylase, a glucoamylase and an proteolytic enzyme to act on a mixture of a polished rice subjected to pregelatinization treatment with rice bran in the presence of water. A feeding saccharified liquid having a Brix of not less than 40%, a total nitrogen content of not less than 3.0 mg/mL, a potassium content of not less than 500 ppm, a phosphorus content of not less than 400 ppm, and a magnesium content of not less than 100 ppm is obtained by using, as a fermentation water, the saccharified liquid obtained by allowing theα-amylase, the glucoamylase and the proteolytic enzyme to act on the polished rice subjected to the pregelatinization treatment and having a rate of 90% or more of the polished rice subjected to the pregelatinization treatment in the presence of the water. <P>COPYRIGHT: (C)2010,JPO&INPIT</p>
