<p><P>PROBLEM TO BE SOLVED: To provide dried ginger for solving problems of conventional dried ginger that is not ground down with a grater and whose production process is complicated. <P>SOLUTION: The porous dried ginger is obtained by freeze-drying raw rhizome ginger.
