<P>PROBLEM TO BE SOLVED: To provide a screening method for a useful yeast having an aimed phenotype, especially a brewing yeast that can produce liquors excellent in flavor. Ž<P>SOLUTION: This screening method for a useful yeast having an aimed phenotype includes the step of leading mutation for a tested yeast and the step of culturing the yeast after mutation induction in the presence of an organic acid which can diffuse into the yeast cell in its proton undissociated state.
