摘要 PURPOSE: A method for manufacturing black garlic extract is provided to remove allicin which is the unique smell of black garlic in a short time and to improve the taste and the flavor of the black garlic extract by obtaining excellent sugar content of 15 brix. CONSTITUTION: A method for manufacturing black garlic extract comprises; a step(A100) of removing the root and the stem from garlic and eliminating foreign materials; a step(A200) of cooking 1kg of the garlic and 2kg of water in a double boiler at 110-120°C for 5-6 hours and extracting the ingredients from the garlic; and a step(A300) of mixing the garlic in a mixer and aging the mixed garlic at 85-95°C for 5-6 hours.
