摘要 PROBLEM TO BE SOLVED: To provide: a method for producing rice blended bread which has excellent bread-making properties, good texture of produced bread, and aging speed equal to or higher than that of wheat flour bread; a new bread making rice kneading agent used for the method; and a method for producing the kneading agent. SOLUTION: The bread making rice filling is produced by boiling raw rice and/or rice flour with water, carrying out an amylase agent treatment during and/or after boiling, and then performing enzyme deactivation treatment. The obtained bread making rice filling is used as a bread kneading agent to produce the rice blended bread having excellent texture and aging speed equal to or higher than that of wheat flour bread without influencing bread-making properties during production of rice blended bread.
