PURPOSE: A method for manufacturing pudding containing figs is provided to extend the expiration date of fig processed products by improving storage properties through the mixing the figs and natural raw materials and to encourage figs cultivation. CONSTITUTION: A method for manufacturing pudding containing figs comprises: a step(S1) of manufacturing a paste by pulverizing frozen figs using a mixer; a step(S2) of mixing and heating sugar, a gelling agent, fructooligosaccharide, citric acid, and purified water; a step(S3) of putting the paste into the liquid mixture when a temperature is 70-80°C; a step(S4) of filling a pudding container with the mixed solution and sealing the container; a step(S5) of sterilizing the sealed fig pudding at 90-100°C for 20-25 minutes; and a step(S6) of completing gel formation by cooling the sterilized fig pudding. The fig pudding comprises 15-20 weight% of a fig paste, 10-15 weight% of the sugar, 0.5-1 weight% of the gelling agent, 3.5-6 weight% of the fructooligosaccharide, 0.1-0.5 weight% of the citric acid, and the purified water.
