PROBLEM TO BE SOLVED: To provide an oil and fat having a high docosahexaenoic acid content by increasing the docosahexaenoic acid content in a glyceride with a simple operation in a short time. SOLUTION: The oil and fat having a high docosahexaenoic acid content is produced by treating an oil and fat material containing docosahexaenoic acid as a constituent fatty acid with an oil and fat decomposition enzyme, wherein the oil and fat material is incorporated with an extract obtained by extracting unrefined oil and fat containing docosahexaenoic acid as a constituent fatty acid with a solvent having an SP value of≥12.
