PROBLEM TO BE SOLVED: To provide fine particles containing a material originated from a microorganism or an organism and excellent in preservation stability. SOLUTION: The particles having a three-layered structure consisting of an outermost shell layer, an intermediate layer and a core part are characterized in that the outermost shell layer is composed of a composition containing gelatin and natural gum and the gelling temperature of the composition is ≤60°C, the intermediate layer is composed of a hydrophobic material having ≤250 cps viscosity at 40°C and ≥300 cps viscosity at 5°C, the core part is composed of a composition containing the material originated from the microorganism or organism, the water content of the whole of the particles is ≤5%, and also the water activity is ≤0.5.
