FIELD: food industry. ^ SUBSTANCE: invention relates to technology used to produce coffee substitutes. The drink is produced by extracting allspice by liquid nitrogen with corresponding miscella separation, preparation of girasol/sunflower, its cutting and drying in microwave field till residual moisture content is about 20% at microwave field power providing warming of the raw material to 80-90C inside the bits for one hour minimum. Girasol/sunflower is fried. Barley grains, chestnuts and soya are fried. Girasol/sunflower, barley grains, chestnuts and soya are mixed in ratio 7:7:2:4. Obtained mixture is impregnated by separated miscella performed with simultaneous pressure boost and depressurisation till atmosphere pressure with simultaneous freezing of mixture and its cryomilling in medium of evolved nitrogen. ^ EFFECT: method enables to obtain flavoured coffee drink with improved organoleptic properties according to non-waste technology. |
