Margarine comprises as emulsifying agent, a partial ester-ether prepared by reacting a previously intermolecularly esterfied substantially non-polymerised aliphatic hydroxy carboxylic acid, containing at least 8 carbon atoms before esterification, with a previously formed polycondensate of an aliphatic polyvalent alcohol containing at least 3 carbon atoms and at least 3 hydroxyl groups (see Group IV (b)). Partial esters of polyglycerol with estolides of ricinoleic acid, monohydroxystearic acid and dihydroxy-stearic acid respectively are mentioned.
