PROBLEM TO BE SOLVED: To provide a system of producing sherbet ice capable of accurately measuring an IPF (ice packing factor). SOLUTION: The system of producing the sherbet ice includes: an ice-making machine 10 for producing the sherbet ice 12; a tank 14 for storing the sherbet ice 12 produced by the ice-making machine 10; an irradiation part 54 for irradiating light to the sherbet ice 12; a light receiving part 56 for receiving light transmitted through the sherbet ice 12 out of light irradiated by the irradiation part 54; and a control device 34 for calculating the IPF of the sherbet ice 12 based on the light receiving intensity of the light received by the light receiving part 56.
