PURPOSE: Red pepper paste containing tomato paste and a manufacturing method thereof are provided to increase the content of lycopene and to improve antioxidant activity, anticancer activity and anti-inflammation properties by aging and fermenting the red pepper paste. CONSTITUTION: A manufacturing method of red pepper paste containing tomato paste includes the following steps: removing a stalk part of fully ripened tomatoes after washing; removing seeds and fiber parts of the tomatoes after peeling the tomatoes with hot water to make tomato juice; manufacturing tomato paste by concentrating the tomato juice; adding powdered red pepper, starch syrup, fermented soybeans powder, salt, and tomato paste; and fermenting and aging a mixture after sprinkling bay salt on the red pepper paste. |
