<P>PROBLEM TO BE SOLVED: To provide a functional food further increased in value by drawing out potential of a yeast extract itself to the maximum without spoiling deliciousness, food taste or flavor. <P>SOLUTION: A method for producing the functional food includes: crushing yeast to dissolve and extract extracted component without oxidizing under a reduction environment by alkaline electrolytic water; adding lactic acid bacteria to the product, and continuously producing GABA by the self-digestion of the extracted component while supplying glutamic acid; and at the same time, decomposition-producing free essential amino acid and peptide having ACE inhibiting activity by the self-digestion of the extracted component. <P>COPYRIGHT: (C)2010,JPO&INPIT |
