<P>PROBLEM TO BE SOLVED: To solve a problem associated with culturing Aureobasidium strain sp. ATCC20524, which is a bacterium producing fructooligosaccharide, in a culture medium comprising maltose or the like, that crude enzymes comprising both enzymes i.e. α-glucosyltransferase and β-fructosyltransferase and having high β-fructosyltransferase activity are produced, whereby the yield of theanderose is remarkably reduced to make the crude enzymes unusable in the industrial production of theanderose. <P>SOLUTION: Crude enzymes comprising both enzymes, i.e. α-glucosyltransferase and β-fructosyltransferase obtained by culturing Aureobasidium strain sp. ATCC20524 is subjected to a heat treatment to remarkably suppress the β-furanosidase activity in the crude enzymes, and subsequently the heat-treated enzyme solution is caused to react with a substrate comprising both sucrose and maltose to produce theanderose in a large amount. <P>COPYRIGHT: (C)2010,JPO&INPIT |
