PURPOSE: A method of preparing crab preserved in soy sauce is provided to prevent infection by pulmonary distoma of crab and decay of crab preserved in soy sauce and to remove a fish smell and a bitter taste of the crab. CONSTITUTION: A method of preparing crab preserved in soy sauce comprises the following steps: washing crap captured during October ~ November; dipping the crap in Foeniculum vulgare extract and agitating for 30 ~ 60 minutes; dipping the crap in soy sauce mixed with alcohol and beef for 3 ~ 4 days; dipping the carp in liquid cooled and boiled for 5 ~ 6 days. The soy sauce mixed with alcohol and beef is made by boiling the soy sauce mixed with alcohol and beef with a ratio of 10 : 1, respectively.
