A method of manufacturing low molecular weight agar with cold water solubility is provided to easily remove the remaining acid, to produce high purity agar and to reduce the cost of production. An acid in the range of 0.1 to 25% by weight is reacted with water insoluble agar in a state in which the agar is dispersed in a mixed solution of water and an organic solvent without dissolution, washed with alcohol solvents to remove the acid, filtered and then dried. The alcohol uses methyl alcohol, ethyl alcohol, (iso)propyl alcohol, (tert-, iso)butyl alcohol and the like alone or a mixture with acetone. The acid uses inorganic acid or organic acid in which the inorganic acid uses hydrochloric acid, sulfuric acid, nitric acid or phosphoric acid; the organic acid uses acetic acid, tartaric acid, salicylic acid, citric acid, hydroxy acetic acid, malic acid, propionic acid, lactic acid, glyceric acid, ascorbic acid, adipic acid, sulfamic acid, sorbitic acid or benzoic acid. The alcohol is reacted with 20 to 70% by weight of acetone within the range in which the reaction product is dissolved in the solvent during the reaction in consideration of the molecular weight of agar. |
