A method for producing fats enriched with diacylglycerides includes carrying out a glycerolysis process. The glycerolysis process is carried out at permanent stirring under nitrogen at a temperature of 5-75 °C, and an enzyme preparation of lipase is used as a catalyst. Thereafter extracting the enzyme from the reaction mixture by filtering or centrifuging and purification of the desired product are carried out. |
