FIELD: food industry. ^ SUBSTANCE: invention relates to technology used to produce coffee substitutes. Method provides for preparation of recipe components, girasol-sunflower cutting, drying in microwave field at specified parametres of process and frying. Also barley grain, oat grain, acorns and nut kernels are fried, specified components are mixed, and produced mix is cryo-ground in liquid nitrogen. ^ EFFECT: method makes it possible to produce new flavoured coffee drink from non-traditional raw materials, and also provides for improvement of organoleptic properties of drink due to its enrichment with extractive substances of miscella and their preservation. |
