<P>PROBLEM TO BE SOLVED: To provide a method for producing a citrate that has high triester purity, is highly safe to humans, and presents a lower environmental burden. Ž<P>SOLUTION: There are provided, (1) a method for producing a citrate including a process of subjecting citric acid and an alkyl alcohol to an esterification reaction in the presence of an acid catalyst using water as a solvent, and a subsequent process of separating water under vacuum, and (2) a method for producing a citrate according to the method (1), wherein a process of adding water to citric acid in an amount sufficient to dissolve the same is further included so as to start the reaction in a form of an aqueous solution of citric acid.
