PROBLEM TO BE SOLVED: To provide a fluid discharge method and a droplet jetting apparatus which can improve foam discharging property in a droplet jetting head. SOLUTION: An ink discharge method is an ink discharge method for discharging an ink from a nozzle of a droplet jetting head by bringing a cap into contact with the nozzle formation face of the droplet jetting head and has a period for continuously changing the discharge flow rate of the ink from a high speed P1 to a low speed P2 during the operation of discharging the ink from the discharge nozzle.
