ONION EXTRACT, METHOD FOR PRODUCING THE SAME, AND FOOD PRODUCT USING THE ONION EXTRACT

PROBLEM TO BE SOLVED: To provide an onion extract giving food product strong body taste which is originally obtained by heating onion, to provide a method for producing the onion extract, and to provide food product containing the onion extract.

SOLUTION: The onion extract is such that the total peak area of furfuryl alcohol, 5-methylfurfural, acetylfuran, and furfural in a gas chromatograph is twice or above of the peak area of decane when admixing 1 ppm decane with the onion extract.
