<P>PROBLEM TO BE SOLVED: To provide a method for producing fermented soybean paste, which uses potato, malted rice and roast salt as raw materials and utilizes processing water (residual juice obtained after boiling potato). <P>SOLUTION: Potatoes are much washed with water by a scrubbing brush to remove mud on the surfaces as preparation, hot water is evenly sprinkled on the potatoes, malted rice is much loosened and mixed with salt (salt-mixed malted rice). In the preparation of fermented soybean paste, a pot is charged with water so as to immerse the potatoes in water and the potatoes are boiled until a bamboo skewer is passed through the potatoes. The boiled potatoes are put in a bamboo basket and peeled while hot. The potato peel is finely chopped by a mixer (brought into a rice cake-like state), the peeled potatoes are finely mashed and mixed with the finely chopped peel. Having a temperature of about 40 degrees, the mixture is incorporated with the malted rice and the processing water obtained in the preparations. In the operation, the processing water is added while adjusting the potatoes almost to a clay state, and the mixture is sufficient mixed. The surface of the obtained material is leveled, a plastic wrap is fitly pasted to the obtained material, a middle lid is placed on the obtained material and about 20% weight stone is placed on the middle lid and the obtained material is aged for 4-6 months. <P>COPYRIGHT: (C)2010,JPO&INPIT |
