<P>PROBLEM TO BE SOLVED: To provide an onion extract especially giving food product rich sweetness and body taste which are originally obtained by heating onion, and especially rich sweetness peculiar to heated onion: to provide a method for producing the onion extract: and to provide food product containing the onion extract. <P>SOLUTION: This onion extract is such that the total peak area of furfuryl alcohol, 5-methylfurfural, acetylfuran, and furfural in a gas chromatograph is twice or above of the peak area of decane when admixing 1 ppm decane with the onion extract, and an absorbance in 450 nm when diluting to 100 times is not more than 1.5. <P>COPYRIGHT: (C)2010,JPO&INPIT |
