摘要 PURPOSE: A composition of glutinous rice cake and a manufacturing method thereof are provided to prevent a body of the glutinous rice cake from drying for a long time by adding grain syrup, maltose and ester DS in a composition of the rice cake, and to make only the surface in a dried state by burying a coating material on the surface of the glutinous rice cake. CONSTITUTION: A composition of glutinous rice cake comprises 40% of glutinous rice flour, 10% of flavor enhancer, 15% of the icy starch, 5% of grain syrup, 5% of the almond, 5% of maltose, 5% of Korean traditional soy sauce, 5% of walnut, 4% of pine-nuts, 4% of the purified water, 0.4% of salt and 1.6% of ester DS based on gross weight of 100%. A manufacturing method of the composition of the glutinous rice cake comprises includes steps for powdering glutinous rice, mixing and aging the glutinous rice with refined water, boiling the glutinous rice with cayenne pepper and Korean soy sauce; mixing and cutting dough with pine-nuts, almond, and grain syrup; aging the dough in 5°C; and drying and aging a product with cuts on the surface.
