<P>PROBLEM TO BE SOLVED: To provide a food composition of processed Zingiber officinale using Zingiber officinale as a raw material, having a healthy function, and excellent in flavor, and to provide a method for producing the Zingiber officinale processed food composition. <P>SOLUTION: The food composition of processed Zingiber officinale contains Zingiber officinale-originated sharp ingredients, gingerol and shogaol, in a weight concentration ratio of 10:1 to 1:10 in a total amount of ≥0.001 wt.%, contains a flavor ingredient: ar-curcumene, in a content of ≤15 mg/kg, and has a saccharide concentration of 40 to 90 wt.%. The method for producing the food composition of processed Zingiber officinale includes heating at least one selected from the group consisting of Zingiber officinale crushed product, Zingiber officinale juice and Zingiber officinale extract as a main raw material, preparing the heated product in an ethanol concentration of 50 to 90 wt.%, removing the formed precipitates, removing ethanol from the obtained filtrate, and further adding sugar. <P>COPYRIGHT: (C)2010,JPO&INPIT |
