PURPOSE: A method of manufacturing noodles containing brown rice and Hizikia fusiform is provided to manufacture noodles which have a high level of nutrients and improved flavor by adding Hizikia fusiform powder to brown rice. CONSTITUTION: A method of manufacturing noodles containing brown rice and Hizikia fusiform comprises the following steps: kneading together Hizikia fusiform powder 0.5~10 weight%, unpolished rice 80 weight%, and starch 1~10 weight%; steaming the dough; extruding the dough with an extruder; cutting the extruded materials to a constant length and thickness; aging the cut noodles; and steaming the noodles for 8 minutes.
