摘要 <P>PROBLEM TO BE SOLVED: To provide a method for stabilizing L-ascorbic acid contained in a plant-derived extract including L-ascorbic acid, using a component naturally existing in plants or the like to improve long term storability of natural L-ascorbic acid included in the extract, and simultaneously improving heat resistance so as not to cause thermal decomposition. <P>SOLUTION: There is provided a stabilization method of L-ascorbic acid contained in the liquid extract from all plants including fruits and vegetables. The stabilization method is characterized in mixing the liquid extract with a stabilization solution containing rutin and/or derivatives thereof to give the liquid extract preparation inhibiting oxidative decomposition of L-ascorbic acid contained in the liquid extract. <P>COPYRIGHT: (C)2010,JPO&INPIT
