<P>PROBLEM TO BE SOLVED: To evaluate freshness of fruit or vegetable on the basis of elapsed days after harvest, by digitizing gas concentrations of oxygen/carbon dioxide gases, which are generated by the respiration of the fruit or vegetable. Ž<P>SOLUTION: A ratio of respective gas concentrations being the gas concentration of oxygen and the gas concentration of carbon dioxide generated by the respiration of the fruit or vegetable in a field, which is varied in accordance with the elapsed days after the harvest, is digitized, and the freshness of the fruit or vegetable is evaluated on the basis of the numerical value. Furthermore, a ratio of the gas concentration of oxygen in the field to the gas concentration of oxygen after the harvest is obtained, and the ratio is graded as a freshness evaluation value, and a relation between the freshness evaluation value and the elapsed days is created, and the freshness is obtained from the elapsed days.
