PURPOSE: A manufacturing method of black ginseng is provided to increase an absorption rate of crude saponin and ginsenoside in a body, and to improve the content of the ginsenoside and the crude saponin without detecting benzoapyrene. CONSTITUTION: A manufacturing method of black ginseng includes a step for steaming and drying process of ginseng. The ginseng is steamed in a pot(2) for steaming. In a steaming process of the ginseng, the ginseng is fermented in a fermentation chamber for 40 ~ 45 hours. In a fermentation step, the rice straw is inserted into the steamed ginseng, and yeast is inoculated in the rice straw. An edible coating agent is sodium alginate, xanthan gum, quince seed gum, hydroxy cellulose, or sodium carboxymethyl cellulose.
