摘要 <P>PROBLEM TO BE SOLVED: To provide a method for producing grilled and dried fish by which high-quality grilled and dried fish is efficiently produced in a large amount. Ž<P>SOLUTION: The method for producing grilled and dried fish includes: disposing fish material in a hermetically-sealed container provided with a number of ventilation holes for ventilation using nonflammable equipment such as metallic mesh so as not to interfere with circulation of air or the like; firstly blowing air heated at 55-80°C into the container using a heater or the like and circulating the air; secondly raising the temperature of the heated air to 170-250°C to heat until the surface of the fish material becomes brown; and finally lowering the temperature of the heated air to 110-150°C to completely dry the fish material.
