PROBLEM TO BE SOLVED: To provide a method of manufacturing a honey-comb structure by which the efficiency of production can be enhanced and the yield of raw material can be improved. SOLUTION: In the method of manufacturing the honey-comb structure, a honey-comb molded body 100 is formed, a plurality of slits 4 are formed in parallel to the direction of extension of a cell in the honey-comb formed body 100 to form a slit-formation honey-comb formed body 110, the slit-formation honey-comb formed body 110 is burned to form a slit-formation honey-comb burned body, notches 5 are formed so as to be opened to at least one side end surface side and include the slits, an assembly 120 of partial segments made by dividedly forming a plurality of partial segments with the notches 5 is formed, and a filler is filled into the notches 5 formed on the assembly 120 of partial segments, thereby forming buffer parts 8 between adjacent respective partial segments to obtain the honey-comb structure 130.
