PURPOSE: A method for culturing mushroom mycelium using natural medium and a method for enhancing content of grain mycelium are provided to maximize mycelium content and to apply to food and beverage. CONSTITUTION: A natural medium used in culturing mushroom mycelium contains 2-5 weight% of sugar, 0.2-0.5 weight% of wheat flour, 0.2-0.5 weight% of soybean powder, 5-10 weight% of onion juice, 20-30 weight% of mushroom extract, and remaining amount of distilled water. A method for enhancing grain mycelium content comprises: a step of pressing grain in order for mycelium to infiltrate into inner tissue of various grains; a step of pulverizing grain; and a step of eluting various kinds of nutrition ingredients to moisture.
