<p>The disclosure relates to a method of heat treating a food, for purposes of extending its shelf-life, in particular an acidic food, in a packaging container of plastic coated paper. In a first step, the walls of the filled packaging container are briefly heated to a temperature above 115°C, e.g. 120-125°C, and in a subsequent second step the packed food is heated to and held at a temperature of at most 100°C, e.g. 90-100°C. The food is thereafter cooled for further transport and handling.</p> |
