PURPOSE: Powder for noodle strips containing no wheat flour is provided to improve flexibility and sticky property of noodles without breakage of the noodles when the content of starch is reduced, and to prevent increase of blood sugar of a body. CONSTITUTION: Powder for noodle strips containing no wheat flour comprises potato starch 22.0 ~ 28.0 parts by weight, gluten 21.0 ~ 27.0 parts by weight, Cynanchi Radix 20.0 ~ 24.0 parts by weight, black rice 4.0 ~ 7.0 parts by weight, silk protein 0.2 ~ 2.0 parts by weight, dietary fiber 5.0 ~ 7.0 parts by weight and modified starch 10.0 ~ 15.0 parts by weight. The powder is molded to the noodles. |
